Are you interested in impressing your non-vegan friends (and your own stomach) with some delicious vegan doughnuts? We put together a list of our ten favorite vegan doughnut recipes for you to check out.

1. Coffee-flavored Donut Macarons

Combine the deliciousness of donuts, macaroons, and coffee all together in one unbelievable treat!

Not only are these treats easy to make and super cute, but they have a very tiramisu flavor that is sure to impress your friends.

Of all the recipes covered today, this one is definitely the best of all time!

For this vegan doughnut recipe, you will need:

  • 3/4C chickpea juice (the juice from a can of chickpeas specifically is called “aquafaba”)
  • 1/2C sugar
  • 2 tbsp instant espresso powder
  • 1 tsp vanilla
  • 1-1/4C powdered almonds
  • 1/2C powdered sugar
  • 2 tbsp of multicolor spherical sprinkles

For your macaroon filling:

  • 1 tbsp vegan butter spread (heaping)
  • 1-1/2 tsp vanilla
  • 2-3C powdered sugar
  • 2-3 tsp non-dairy milk
  • 4Tbsp smooth raspberry jam
  • 1/3C granulated sugar

Simmer your aguafaba in a saucepan over medium heat for about five minutes. Remove and let cool.

Pour the cooled chickpea reduction into a kitchen stand mixer with a balloon whisk.

Whisk on high for a few minutes. Add 1/4C of the sugar and whisk until combined, then add the rest of the sugar plus the vanilla.

Whisk until a meringue forms. Add espresso powder and whisk until even in color.

Combine the powdered sugar and almonds. Be sure to pick out any large chunks.

Mix the dry mix into the meringue carefully with a spatula.

To make the macaronage, firmly press the batter against the side of the mixing bowl and scoop it up before turning it over. Repeat up to 20 times until the mixture is very thick.

Pipe about twenty circles of the thick mix onto a baking sheet.

Sprinkle the rainbow sprinkles over half of the macaroons.

Let them dry for two hours, then bake. Macaroons are tricky– you must put them into a cold oven, then set the over at 100 degrees to bake for twenty minutes.

Turn your heat off and leave them inside for fifteen minutes, then leave them inside to cool with the oven door open for ten minutes.

Mix the butter, powdered sugar, vanilla, and a tsp of milk until smooth.

Pipe the frosting in between the macaroon shells and sandwich them together with a bit of jam.

Roll the edges of the macaroons in powdered sugar.
